Mint and Spinach chutney

Mint is popular as a a garden herb,mint is a remedy to calm and relax the stomach and can relieve travel sickness.Mint is best enjoyed fresh as the dried leaves lose much of their potency.

Spinach has many excellent health benefits.Though there are so many varieties of greens we use in our cooking, spinach is very common and widely used in our Indian Cuisine.  Spinach like any other leafy greens is loaded with Calcium, folic acid, Vitamin K and iron.

Here is a very healthy nutritious recipe of Mint and spinach.

Ingredients:
2 cups tender fresh spinach leaves
3tbsp fresh mint leaves
2tbsp chopped fresh coriander leaves.
1 small red onion coarsely chopped
1 small garlic clove chopped
1 fresh green chilli chopped
2 1/2tsp of granulated sugar
1tsp tamarind juice or lime juice.

Method:
1 .Place all the ingredients in a blender and process until smooth, adding only as much water as necessary.
2. Transfer to a serving bowl, cover and leave to chill in the refrigerator for at least 30 mins before serving.
3.Serve with hot samosas /Kebabs.
